  7. Place ramekins in a baking dish and fill with hot water halfway up sides.
  8. Bake for 30–35 min until custard is set but still jiggles in center.
  9. Remove ramekins and cool to room temperature, then refrigerate 2–3 h.
  10. Before serving, sprinkle sugar on top and brûlée with torch until golden.
